I was happy to pick the last of the crop and cooked up a storm. So here it is below:
thinly slice the melanzana
pour a little olive oil in a frying panwhile frying, season with salt & pepper, fresh parsley and oregano
slice a small onion and a clove of garlic chopped
fry all together for about 5 minutes
then sprinkle bread crumb, cook for about one minute until crumb are a little brown and grate parmigiana cheese just before serving.
And Voila, it's ready to be served!
Serve with steamed rice or I guess it will taste just as good with any pasta.
